Produced with unrefined barley and malt, it is distilled three times in copper stills called Pot Stills, and then left to mature at least seven years in oak barrels that had housed Sherry or Bourbon, a procedure that will enhance its taste and softness. Very bright gold color, the nose gives complex aromas of dried flowers and fruit in jam, mown grass, spices and custard, notes of dried fruit and maderized memories. On the palate it is smooth and dense, corresponding in fruitiness and spices and with a nice honeyed persistence.
