Wint & Lila is produced by the Casalbor distillery in Puerto de Santa Maria (Càdiz, Spain), which boasts a history of over 200 years. The name of the gin derives from the Company of the Indies founded in Càdiz in 1646 by Juan de Wint and Margarita de Lila, one of the first companies dedicated to maritime trade with America and the East. The gin stands out for its distillation with different stills heated in Bagno Maria and for the particular bottle that recalls those of the pharmacies of the time.
The master distillers that produce Wint & Lila have been using the same stills for generations. In the distillery there are 7 different small stills, each of which has its own personality that gives the gin special nuances; they also make possible a limited and customized production. The distillation method is the London dry one, but the peculiarity is that direct flame is not used since the stills are heated through a system that uses tanks full of water (Bagno Maria). In this way the process is much slower and more delicate, but it allows you to extract the best essences of all botanicals without altering them. The different distillates are then left to rest for a few weeks before being combined together with the addition of pure water. The gin is finally bottled in the particular bottle with the personalized cap that recalls the ancient bottles of the pharmacists of the past.
The aroma of this gin is a mixed complex of fragrances, almost sparkling. The combination of juniper and the freshness of mint and orange blossom predominates, even on the palate. In general on the palate it is soft and delicate, but also refreshing, with light herbaceous notes. Finally, it leaves a citrus scent in the mouth. It is a well-balanced combination of the traditions of Andalusia and the flavors and fragrances of the Mediterranean.
